I bought some fresh thyme from flamington fresh food market last Saturday and this big bunch was just for a dollar! I just could not resist cooking this dish today.
Using the slow roast method I preheated the oven at 150 degrees and cooked these chicken thighs for one and a half hour at the same degree.
Thyme, lemon and garlic goes so well together you just cannot go wrong with these three together!
So here’s what I did.
Line the baking tray with foil and pour in some extra virginolive oil!
Make a bed of thyme, season with salt and massage the olive oil through.
Slices of lemon goes in next!
Place chicken thigh on that beautiful bed.
Season with salt again… Be generous… Plenty is good! Add in fresh garlic or garlic powder and pepper then massage it through.
Slice down some more lemon and put one on each.
Bake for 1 hour at 150 degrees. Take it out.
Veggies goes in now. In my case mushrooms and sweet potatoes. Spray some olive oil on them and put them back into the oven to continue cooking for another 30 minutes.

I sautéed some baby yellow French beans with garlic as an add on and dinner was served!☺️
