Do your lemon curd with lime!

It is so easy to make lemon curd. All you need is some sugar! whichever… brown, white, Muscovado whatever! Some eggs and yolks, LEMON but in this recipe LIME!!! The zest and the juice… everything! 🙂 Whats the last one? AH! BUTTER!!!

And then there are times when you actually think about loosing weight, so the first thing you do is separate the yolks from the whites to make yourself a full-filling  white egg omelette but what you haven’t battled yet is the courage to chuck down those glorious luscious golden egg yolks!!! And thats when a recipe like this comes in handy! 😀

So lets do this… crack three whole eggs… in a sauce pan. Now another three eggs in a separate bowl, extract the yolks and put them into the sauce pan. You should be having 3 whole eggs and 3 yolks in the sauce pan.

Add 8-9 Tbsp of sugar. I use raw cane sugar and there is no particular reason to this.

This is what it should look like… don’t worry about the bubbles… just whisk the sugar in until it is smooth. Yup! kill all the transparent lumps you can find. You can use a nutri-bullet to do the job.

Add in 120 grams of butter. Use the salted one, it makes a huge difference!

1 Tbsp of good quality vanilla bean paste with seeds. You can skip this step if you want. Adding this in is just me being me. 😛

zest of 2 whole lime. Be very generous.

Squeeze out the juice from 2 whole lime into it.

By now you will know why vanilla bean paste is so not essential for this recipe. 😉

Whisk constantly on low heat until the mixture heats up, just make sure it does not boil. You don’t need to go mad whisking quickly, slow constant whisk will do the job just fine.

Stage 2: Slowly thickens.

Stage 3: Increase heat slightly and whisk constantly to thicken the mixture even more. Don’t let it bubble up. Nope! Strictly no.

Its smooth and sharp at the same time, the sugary sweetness cuts through the zesty lime perfectly and the butter balances it with sheer honesty. The vanilla in the biscuits and the lime curd bonds like a family never-ever to be apart. Im getting too dramatic with this! Thats it! Where’s my glass cloche dome?
